[Recipe] Quiche Lorraine & Federweisser

Rhenish a typical combination: Quiche Lorraine (but often onion tart) and fairy. The fairy is there only a few weeks during the harvest season, so you must enjoy it so often, how it is possible ;) You can drink of course normal wine. Given the occasion, there is a recipe for a hearty this time „Cake“.

Quiche Lorraine


250 g flour
125 g butter
1 TL salt
5 EL water

200 g of cooked ham
3 Eggs
300 g crème fraîche
250 g of grated cheese (z.B. Emmental cheese)
a pinch of salt
some pepper


All ingredients (250 g flour, 125 g butter, 1 TL salt and 5 EL water) knead into a dough.
For at least 30 min. in the refrigerator.
Put dough in the form.

Ham chop and spread on the bottom of the dough.
3 Eggs, 300 g cream fraiche, 125 g of grated cheese mix and season with a pinch of salt and some pepper.
In the baking-Tin type.
Then the remaining 125 evenly distribute g geriebenenKäse on it

At 200° C in a preheated oven about 45 min. Bake.
Possibly. 10 min. before the end of the baking time with aluminum foil cover, so the Quiche is not too dark.
