[Recipe] Classic plum cake with sprinkles

Klassischer Zwetschgenkuchen

Again Plum cake? Yes, However! The trees are full of it and they taste wonderful especially baked. And why classic? The ground is a yeast dough. This requires of course some time. All in all required the preparation of up to 3 Hours (incl. Back- and walking times).
If you want a high floor takes the form of a 26, use a 28th form for thin dough.


Yeast dough
25 g butter (soft)
100 ml milk
1/2 Cube fresh yeast (21 g)
250 g flour
25 g sugar
1 Egg
1 Pinch of salt

50 g flour
25 g butter (cold)
25 g sugar
1 MSP. Cinnamon
1 Pinch of salt
1 Vanilla bean

CA. 1 kg plums
5 EL bread crumbs


Yeast dough
In a small pot 100 heat ml milk, until it is lukewarm.
Yeast just crumble Dan the half cube.
Stirring until the yeast has dissolved.
2 EL stir flour and some sugar.
Cover the dough with plastic wrap 30 min. Let go.

At the same time give the remaining flour in a large bowl.
The egg and a pinch of salt, Add the remaining sugar and the room temperature butter. Add the leavened dough (If the 30 min. Walking time past are).
Then knead everything into a smooth dough.

Cover the dough in a warm place 1 Hour Let go.

Rezept Zwetschgenkuchen

50 g flour, 25 g butter (cold), 25 g sugar, 1 Pinch of cinnamon, 1 Pinch of salt and the mark of a vanilla pod in a bowl type. Knead with your fingers so long, by streusel.

1 wash kg plums, halve and stone.
Cut the halves in half again.

Plum cake
Grease the baking Tin with butter.
Roll out and then put the yeast dough to size of baking pan.
Pull up on the edge.
Prick the dough with a fork, then with 5 EL sprinkle bread crumbs.
Again 10 min. Let go.

The plums circular, put in several rows on the dough.
Then distribute the streusel on it.

At 180° C for 40 min. Bake on bottom rail in preheated oven.
