Breakfast muffins out of the pan

Yes, you can call me crazy. But I’ve done it – I baked muffins in a pan.

Bake muffins in a pan

When I realized I wouldn’t have an oven neither a microwave in my temporary apartment in the Netherlands, I was not really happy about it. How should I survive three months without baking? Exactly, it’s impossible. So I researched on the Internet for like-minded people and actually found this page, which describes how to bake bake muffins without oven in a pan.

  • fill the bottom of a pan with 2 – 3 fingers of salt
  • heat pan with the salt over medium heat for a few minutes
  • divide batter evenly among silicon muffin cups and put them into the pan.
  • cover the pan
  • reduce heat and bake over low heat
  • Baking time can be a bit longer than in the oven

It only took me 3 tries to figure out the right amount of salt so the muffins finally didn’t burn. However, I have the idea the muffins do not get really golden brown – or I’m just too impatient for that. But the muffins taste as good as the ones out of the oven ;)

Baking breakfast muffins in a pan

Ingredients
for 8 muffins

80 g butter
100 g sugar1 egg
250 g all-purpose flour
100 ml milk
2 tsp baking powder
4 tbsp oats
1 banana
8 tsp chocolate sprinkles

Directions

Whisk together 80 g unsalted butter, 100 g of sugar and an egg.
Add 250 g all-purpose flour, 100 ml milk, 2 tsp baking powder and 4 tbsp oats and stir until well combined.
Dice the banana and fold with the chocolate sprinkles into the dough.
Divide batter evenly among prepared muffin cups.
Sprinkle some oats over batter in each cup.

Cook about 30 min. in the pan (see instructions above).
Or bake in the preheated oven at 180 °C for about 25 minutes.
